• Winemaker Pete Seghesio learned the art of crafting salumi from his grandparents – Italian farmers who settled in Northern California's Sonoma Valley. Today, Seghesio's Journeyman Meat Co. celebrates the family heritage using classic Italian techniques and the abundance of the local area. Hand prepared using pasture-raised, richly marbled heritage pork, the company's bacon is slowly wet-cured and smoked over Pinot Noir barrel staves. This collection includes four delicious flavors to enjoy for breakfast, on sandwiches or in your favorite recipes.

• Sonoma County Apple Nitrate-Free Bacon: To produce its delicate sweetness, this uncured pork is brined in apple juice and slowly smoked over local applewood in a five-stage process. (set of 2; 12 oz./340g each; 1 lb. 8 oz./680g total)
• French Toast Bacon: Honey, brown sugar, maple syrup, cinnamon and vanilla give this bacon its delicious savory-sweet flavor. (set of 2; 12 oz./340g each; 1 lb. 8 oz./680g total)
• Napa Cabernet Bacon: This limited-edition bacon is prepared with Duroc heritage pork from family farms, brined in Napa Valley Cabernet Sauvignon and smoked over Cabernet barrel staves to impart flavorful notes of cherry, cocoa and smoke. (set of 2; 12 oz./340g each; 1 lb. 8 oz./680g total)

RECEIVING INSTRUCTIONS

• Bacon ships chilled with gel packs.
• Upon receipt, store unopened in refrigerator for up to 2 months or in freezer for up to 1 year. Once opened, store in refrigerator and enjoy within 1 week.

• Barrel Bacon: Pork belly, water, 2% or less of: sea salt, brown sugar, sugar, sodium phosphate, sodium erythorbate, sodium nitrite.
• Sonoma County Apple Nitrate-Free Bacon: Pork belly, organic apple juice, 2% or less of: sea salt, cultured celery powder, cultured cherry powder, organic cane sugar, yeast extract, natural flavors.
• French Toast Bacon: Pork belly, water, brown sugar, 2% or less of: sea salt, honey, sugar, maple syrup, cinnamon, vanilla, salt, sodium phosphate, sodium erythorbate, sodium nitrite.
• Napa Cabernet Bacon: Pork belly, water, 2% or less of: Cabernet Sauvignon, salt, brown sugar, maple flakes, sugar, sodium phosphate, sodium erythorbate, sodium nitrite.
• These products are prepared and packaged using machines that may come in contact with dairy, wheat/gluten, mustard.
